Coax best out of your Rayburn…

LOUISE Walkers cook-book* is much more than a collection of recipes, splendid as these are. Its a guide to living with a Rayburn cooker/heater presented with confidence by someone who not only uses one but trains others to do so too.

Ms Walker is well aware of what worries newcomers to Rayburn cooking, and as well as explaining techniques for getting the best results, she gives the answers to the 20 questions she is most often asked.

Her courses for those who have recently bought or inherited a Rayburn are most in demand in the run-up to Christmas period, so she has made a point of including a section on Christmas cooking guidance and she concludes her tips and suggestions with a gentle command: "Whatever RELAX."

Though her recipe selection is wide (and we give a recipe from the puddings chapter here), Ms Walker does not claim to have produced the definitive cook-book but a reference point and a basis for using other recipes with confidence. AR

Magic lemon pudding

sponge:

100g (4oz) self-raising flour

100g (4oz) butter

100g (4oz) caster sugar

2 eggs

grated rind of 1 lemon

1-2 tablespoons milk

sauce:

100g (4oz) caster sugar

2 tablespoons cornflour

juice of 1 lemon made up to 300ml (0.5 pint) with boiling water

Grease a 2-pint oven-proof dish. Combine the flour, softened butter, sugar, eggs and lemon rind in a mixing bowl. Beat together with an electric beater or wooden spoon until smooth and fluffy. Add milk to make a soft, dropping consistency if needed. Spread into prepared dish. For the sauce, combine the sugar and cornflour. Gradually blend in the lemon juice and boiling water mixture. Pour onto the sponge mixture. Set the top oven to "Bake" (180C/350F) and put the oven shelf on the second set of runners from the bottom. Put in the pudding and bake for 30-40min. When baked, the pudding should be golden and firm on the top. The sauce will now be at the bottom. Serve hot with yogurt or cream.
