Fatty acid health message quest
OMEGA-3, a fatty acid found in grass and linseed, has been found to have an effect on beef flavour.
But Jeff Wood, of Bristol University, says the industry now has to convey the message that meat with fatty acids is not unhealthy.
This particular fatty acid also increases shelf life of beef. In trials, meat from grass fed animals has outlasted meat from concentrate fed animals in shops, retaining a deep red colour for more than 10 days, by which time concentrate-fed beef had turned a dull grey colour. *
