Grass feed sweeter

DIET can affect lamb taste, but breed also makes a difference.

Work at Bristol University and Harper Adams shows that grass- fed lamb has a sweeter taste than concentrate fed lamb and scored the best overall liking when tested by a taste panel, explained Bristols Jeff Wood.

However, the taste panel also found breed differences between the Welsh Mountain, Suffolk, Mule and Soay lambs tested. Soay lamb stood out most, with tasters scoring it as an almost completely different product, a good basis for developing a marketing scheme, said Prof Wood. &#42
