Most miss carcass spec

FEWER than 40% of finished beef animals fall into target carcass specifications.

Speaking at the conference, MLC beef scientists Duncan Pullar warned that aggressive pricing on carcass grids by many processors might see that figure improve. "There is an 8p/kg difference in price between a fat class 3 and a 4H. This is because a processor will have 10kg less meat to sell from a 300 kg, 4H carcass than one grading 3. That is why the pricing grid is the way it is," he said.
