Luxury turkey producer Copas Traditional Turkeys has teamed up with UKTV Food chef Paul Clerehugh in producing what they believe to be the first turkey product designed for chefs, by a chef.

Copas Turkey Tournedos will be made available to leading restaurants & hotels, either direct from the farm locally, or via Copas Turkey stockists throughout the UK, providing an opportunity to offer a premium British product on their festive menus.

The Crooked Billet, Paul Clerehugh’s award-winning Country Inn near Henley-on-Thames, will be one of them. Mr Clerehugh explained: “With a busy à la carte restaurant, I needed to find a way of cooking Christmas turkey “to order”, while guaranteeing quality, portion continuity, plus time and cost control.

“The Copas Turkey Tournedos I have developed do just this and have a dry-aged gamey flavour which my customers are going to adore.”

The catering sector is well known for being price sensitive, which often makes local sourcing prohibitive, especially within the turkey industry when cheap imports are in ready supply at Christmas time. However, those that value quality and have been interested in Copas Turkeys in the past, have mainly struggled with the whole-bird format, from which portion control and cooking “to order” is difficult.

Jodie Cavaye, sales and marketing manager, added: “We have always felt it was a shame that those who value our high welfare and traditional production methods when buying for their own table, have had to compromise when planning a night out, either socially or for business, in the weeks leading up to Christmas.

“To help them find menus featuring Copas Turkeys or Copas Turkey Tournedos on their menus this Christmas, we have added a Dining Out section to our website where all participating restaurants or hotels will be listed.”
