Wanted: West Country pie flavours

A young, Bristol piemaker has appealed to Farmers Weekly for help finding local producers to give more of a West Country flavour to his award-winning pies.

“We use a lot of farmers and suppliers, but we’ve found it difficult to source the products we need,” said Tristan Hogg, director of Pieminister.

“If we can get it locally, we shouldn’t be buying it elsewhere.”

The kitchens require 1.5t of food a week, but there is the capacity to treble output.

Farmers would have to be able to supply a range of welfare-friendly meats and vegetables all year round.

But with increasing sales and hopes of supplying Waitrose, Mr Hogg said it was an exciting opportunity for producers.

The list of required ingredients includes: Butternut squash, onions, garlic, celeriac, leek, celery, carrots, mushrooms, potatoes, herbs, Bramley apples, beef, lamb and kidney.
