Poor fry colour is the most common cause of rejection in processing crops which is why the BPC have produced a fry colour assessment chart. "It clearly illustrates what growers should be aiming for in terms of colour to satisfy end-user requirements. But there is no substitute to actually cooking samples to see and judge their characteristics," says Ajay Jina.
