Waitrose adds ostrich to its egg range

Eggs at Waitrose have gone supersize this spring with the retailer exclusively stocking Clarence Court Ostrich Eggs, produced from UK flocks.

Weighing in at nearly 2kg, an ostrich egg is roughly equivalent to 24 large hens eggs and can take up to two hours to hard boil.

Ostrich eggs have a distinctive, light flavour and texture, making them ideal for cooking. For the culinary-minded, that’s almost 100 meringues or 32 soufflés, says Clarence Court.

Waitrose egg buyer, Frances Westerman, said: “The ostrich egg is a real show-stopper, not just in terms of looks but also taste. Our customers like experimenting with new food ideas. We’ve seen growing popularity of duck, pheasant and goose eggs, now it’s the turn of the ostrich to take off.

As a seasonal product, the eggs will only be available in selected Waitrose stores during the ostrich laying season of mid-April to August.
