Serves 4-6

  • 1 can of chick peas (410g)
  • Sliver of garlic
  • Squeeze of lemon juice
  • Ground black pepper
  • 50ml (2 fl oz) olive oil
  • 2 teaspoon tahini (sesame seed paste), optional

Drain the chick peas discarding the liquid and crush the garlic.

Blend them in a food processor, when smooth add the lemon juice, tahini if using, black pepper and olive oil.

Taste for seasoning adding a little salt and/or more lemon juice.
