Chef Marc Baumann (pictured) who opened his restaurant, Baumanns Brasserie in Coggeshall, 14 years ago, likes to spend his money on local produce too. "At my restaurant we source, trace and serve fresh ingredients locally wherever possible," he said. These included "wonderful meat" including pork from Gloucester Old Spot pigs, vegetables, fish, native oysters; and hams and maple cured bacon "to die for" from a butcher in Ingatestone.
"To enjoy foods produced in a traditional and slow environment you have to pay more," he explained. "But such food is a joy and a joy is something we can all do with."
