16 small new potatoes
8 rashers of streaky bacon, smoked or unsmoked
Freshly ground black pepper
A little butter
- Preheat the oven to 190C (375F, Gas mark 5). Scrub the potatoes. Cut up the bacon into small squares. Allow about four potatoes per person and make a parcel of potatoes and bacon using well-buttered aluminium foil. Season only with black pepper if you are using smoked bacon. Fold down the edges of the foil so that the parcel is sealed and cook for about 35 minutes or a little longer, depending on the size of the potatoes. They will come out perfectly cooked and full of flavour. Great as a side dish for a barbeque.
