Quickie pork mince stirfry
450g (1lb) lean pork mince
1 garlic clove
2 tablespoons soy sauce
and
2 tablespoons tomato ketchup (or 1 jar stirfry)
1 carrot, cut into thin strips
1 courgette, cut into thin strips
1 pepper, deseeded and cut into thin strips
(Alternatively use 1 bag stirfry vegetables or a selection of vegetables of your choice)
In a large non-stick wok or saucepan, dry fry the mince and garlic until changed colour, about 4-6min. Add soy sauce and tomato ketchup (or jar of stirfry sauce), followed by vegetables. Continue cooking for a further 4-5min until vegetables are of the desired crunchiness. Season. Serve with rice, noodles or jacket potatoes.
Serves 3-4. Cooking time: Approximately 10 minutes.
