MALTSTERS growing demand for higher nitrogen barley samples seems set to continue, advises the Institute of Brewing. Demand for sub 1.55% nitrogen barley, as used in cask condition ale, is now less than 5% of the 2mt UK malting market, and the swing to lager-type beers seems remorseless, says Miles Templeman of the Whitbread Beer Company. Barley in the 1.60-1.85% range accounts for 60% of demand, and sub 1.65% nitrogen for distilling, 30%.
