Trade scheme to help butchers buy live

YOUNG butchers will receive training on assessing meat from hoof through to abattoir under a Scottish Federation of Meat Traders Association project, in conjunction with the Scotch Quality Beef and Lamb Association.

The pioneering initiative is set to ensure that the skills and benefits of
“buying live” are passed on to those setting out on a career in the meat trade.
